A Spendid Day!


The sun was out today, and it was a day well spent! I weeded the veggie garden, the pumpkin patch, The sunflower bed, and all along the sidewalk I pulled weeds. I have the day lily bed and the window bed left to do. I mowed, and cleaned up the area where I had all those pots that failed-garbage. I have tomatoes, and my cosmos are beautiful. Things are growing, it has been real slow, been so cold, and the nites are still cold.

I made tartar sauce tonight with snipped herbs from my barrel and garden, chives, basil and parsley went into it, a few dashes of Tabasco, lite mayo, lemon zest, lemon juice, lemon pepper, sea salt, sweet pickle relish, and a bit of juice. I made catfish fingers, tasted really good, the catfish was really tasty, thank- god! last time I bought some, it wasn't that great.It was a nice meal after a good day in the back yard.

And to put the icing on the cake all evening it has rained , and not a pouring one either. A bit of thunder and a lightening show every once in awhile. Tomorrow I need to do paper work, if it is nice in the morning, I will clean those two beds and do paper shit outside with a glass of raspberry lemonade! And if it rains, a nice Carmel mocha in my comfy chair. I watched "Step-Brothers" tonight, amusing.I have two more Will Ferrell ones to watch by this week-end. Today I am pretending life is good.

Cranberry Wild Rice Bread....MMMMMMMM

INGREDIANTS 1 package active dry yeast 2 1/4 cups warm water (110-115 degrees F). Divided 1/4 cup sugar, divided  1/4 cup molasses 1/4 cup vegetable oil 1 tablespoon salt 2 cups cooked wild rice 1 package Sun-Maid Cape Cod Cranberries, chopped 4 cups Bread flour 2 cups whole wheat flour DIRECTIONS In a mixing bowl, dissolve yeast in 1/2 the warm water, with i/2 the sugar: Let stand for 10 minutes. Add the molasses, oil, and remaining water and sugar: Mix well. Add wild rice and chopped cranberries. In another bowl mix together both flours with 1 tablespoon salt. Stir in enough flour to make a soft dough. Turn onto a floured surface: Knead until smooth and elastic, about 8 minutes, add more flour if needed. Place in a greased bowl and let rise in a warm lace until doubled, about 1 1/2 hours. Punch dough down, divide into two loaves, place into greased bread pans. Let rise again until doubled. Potato Zucchini pancakes

Zucchini, Potato,Rosemary Pancakes with a Raspberry Chipotle Cream Sauce These are my favorite things in the world to make. When I had a garden, and used just picked herbs and Zucchini...Life in the kitchen was so much fun! I will admit I'm not that great with measuring things when I cook with seasonings, everything is pretty much eye-balled. But I did try to figure them out when I did them to write up. These are so very good you will want to make them all summer long!!!! Ingriedients 2 Cups Zucchini, grated thinly 2 Cups Russet Potato, grated thinly Zest of one lemon Juice of one lemon 1/4 cup Panko bread crumbs  3 cloves minced garlic 2 teaspoons minced Rosemary 2 teaspoons finely chopped Flat leaf Parsley 2 teaspoons finely chopped chives 3 chopped Scallions 2 teaspoons Sea Salt 2 teaspoons Lemon Pepper Mix all together Whisk 2 Eggs with 3 tablespoons heavy cream, Add to above ingredients. A Perfect Day

It is foggy and dark outside. A perfect day to let the mind wander. It is a full day of Julia Child today, that's been fun this morning. I will get to the movie, maybe this week. Julie & Julia I think it's called. But I learned the secret of popovers! You learn something new everyday. Don't use a pan, use separate custard cups, leaving room between them for the heat to circle, and that is what will make them really pop up. I think I will make some on Monday, I will be home for dinner, so I will make popovers and a shrimp salad. I will be able to use fresh peas. And I am making pesto, Have everything I need, think I will freeze in ice cube trays, then use when needed. And If I want fresh pesto, I only need to buy a container of basil, add a few ice cubes, made it stretch. Pick Sage to dry also, and I have a sage that is getting crowded out, gonna have to move that baby to it's own pot. And with this rain, weeds are growing again. I am hoping Monday is a sunny hot day
