A good day


It was a good day today. I walked to the store, I think i is less than three miles,maybe more ? And then a friend picked me up. I did a major grocery pick-up.And I got some really good things, everything to make pulled pork. And I found a Raspberry Chipolte B.B.Q. sauce, sounds good to me, and a few Chinese meals, with seafood or chicken, choice of fried rice or, Chinese noodles, and a few other add-ins. And lots of eggs, addicted to ham and cheese omelets. I still have stuff to make empanada's. And enough ground beef to make a few hamb. patties up. Fruit was pretty decent, I liked the way the strawberry's looked, and the red grapes ,nice and sweet. The only hing I did not get on my list was cereal, but I am having a hard time finding one that agrees with me.I did buy a treat, Tzaki sauce, and a loaf of forccia bread. And I got the basics, And I did it again, got everything to make pineapple canadian bacon pizza, and I always throw most of it away.But this time I am going to make individual pizza's, and do one as a shrimp and pesto pizza. That sounds good! I could not believe that a case of diet coke was $7.00 Screw that,picked up the jugs for a buck,cheaper. And I was so happy they finally got in my tart mango frozen yogurt. A little bit of that every once in awhile, tasty!!! So, it is supposed to rain tomorrow. And if it does I will spend the day making food and freezing portions.I really want to make eggplant parm, but the eggplants looked like shit.

More liquid miracle grow was bought today, and I doused the garden. The beans and zucchini I replanted are coming up really good. I am a bit worried about my sunflowers, I hope they are getting enough sun, they look a bit weak compared to a few in the garden. They get six hours of full sun, and then just on and off in the afternoon. Only time will tell. So I got a really good walk in, I putzed in the garden, did dishes, pretty productive day. I go to sleep with the thought " I did not waste today."

INGREDIANTS 1 package active dry yeast 2 1/4 cups warm water (110-115 degrees F). Divided 1/4 cup sugar, divided  1/4 cup molasses 1/4 cup vegetable oil 1 tablespoon salt 2 cups cooked wild rice 1 package Sun-Maid Cape Cod Cranberries, chopped 4 cups Bread flour 2 cups whole wheat flour DIRECTIONS In a mixing bowl, dissolve yeast in 1/2 the warm water, with i/2 the sugar: Let stand for 10 minutes. Add the molasses, oil, and remaining water and sugar: Mix well. Add wild rice and chopped cranberries. In another bowl mix together both flours with 1 tablespoon salt. Stir in enough flour to make a soft dough. Turn onto a floured surface: Knead until smooth and elastic, about 8 minutes, add more flour if needed. Place in a greased bowl and let rise in a warm lace until doubled, about 1 1/2 hours. Punch dough down, divide into two loaves, place into greased bread pans. Let rise again until doubled. Potato Zucchini pancakes

Zucchini, Potato,Rosemary Pancakes with a Raspberry Chipotle Cream Sauce These are my favorite things in the world to make. When I had a garden, and used just picked herbs and Zucchini...Life in the kitchen was so much fun! I will admit I'm not that great with measuring things when I cook with seasonings, everything is pretty much eye-balled. But I did try to figure them out when I did them to write up. These are so very good you will want to make them all summer long!!!! Ingriedients 2 Cups Zucchini, grated thinly 2 Cups Russet Potato, grated thinly Zest of one lemon Juice of one lemon 1/4 cup Panko bread crumbs  3 cloves minced garlic 2 teaspoons minced Rosemary 2 teaspoons finely chopped Flat leaf Parsley 2 teaspoons finely chopped chives 3 chopped Scallions 2 teaspoons Sea Salt 2 teaspoons Lemon Pepper Mix all together Whisk 2 Eggs with 3 tablespoons heavy cream, Add to above ingredients. A Perfect Day

It is foggy and dark outside. A perfect day to let the mind wander. It is a full day of Julia Child today, that's been fun this morning. I will get to the movie, maybe this week. Julie & Julia I think it's called. But I learned the secret of popovers! You learn something new everyday. Don't use a pan, use separate custard cups, leaving room between them for the heat to circle, and that is what will make them really pop up. I think I will make some on Monday, I will be home for dinner, so I will make popovers and a shrimp salad. I will be able to use fresh peas. And I am making pesto, Have everything I need, think I will freeze in ice cube trays, then use when needed. And If I want fresh pesto, I only need to buy a container of basil, add a few ice cubes, made it stretch. Pick Sage to dry also, and I have a sage that is getting crowded out, gonna have to move that baby to it's own pot. And with this rain, weeds are growing again. I am hoping Monday is a sunny hot day
